I’ve been using the Instant Pot* a lot lately to make dinner and I’m LOVING it! I like that I can cook almost everything in one place, it’s easy to clean, and small enough to store in our RV. It’s the convenience of a crock pot, but so much faster. I typically make chicken pot pie in the crock pot, but decided to in soup form in the Instant Pot. It was really good! Here’s the recipe for a 3 quart pot. If you are using a 6 or 8 quart, double the recipe!

Other Tips
- If you’re not a fan of raw chicken or need on a time pinch, skip cooking the chicken and use pulled meat from a rotisserie chicken. This is also a great way to use that leftover pulled chicken.
- Don’t want to chop veggies, use a bag of frozen mixed vegetables and let them sit for 5 minutes after you add them.
- If you want a creamier soup, use less chicken broth and add 1/2 c. of heavy whipping cream. You could also replace your milk with heavy whipping cream.
- I served with a Pillsbury Flaky Layers Butter Biscuits and it was delicious!
